The name reflects Adam’s ethos: there is no such thing as an “ugly” ingredient, only wasted ones. Every element, from the hyper-local produce to the snacks made from “off-cuts,” is designed to prove that luxury dining and a zero-waste philosophy can go hand-in-hand in one of Cornwall’s most dramatic settings.
